About the Business

Determined to spread his love of fine dining at an accessible price with the community, Egidio Squillace created Compa, an Italian restaurant café specialising in on-the-go gourmet food for busy individuals. The range includes signature pinsas, paninis, salads, sweets, and coffee.

As a veteran chef, Egidio runs multiple restaurants in addition to Compa across WA including Birraz Ristobar. His success at Compa meant he required refrigeration with a larger storage capacity to meet the growing demand of his customers with a priority on reliability and excellent customer service.

Challenge

On-the-go food means customers expect a fast service time. The team at Compa required their food to be displayed in a pleasing way that provided easy visibility for customers in a small space.

Their signature pinsas, which are fresh hand-pressed pizzas, are made with a combination of soy, rice, and wheat flour, and fermented for up to 72 hours. This requires a large storage freezer so the team can precisely control the temperature of their doughs and other products.

Solution

Egidio reached out to Tony from Auswest Coolrooms for recommendations. The units supplied were:

By choosing a larger display, Compa maximises the counter space, providing ample room to store and display their range of savory and sweet foods. In locations exposed to varying ambient temperatures during the day, the digital temperature controller allows staff to precisely monitor maintain the correct the temperature for optimal food safety.
  • Upright storage freezer – UF1300SDF-NR is Bromic’s largest upright freezer, perfect for Compa’s high storage and turnover requirements. The stainless steel provides a robust and easy to maintain exterior, important qualities for fast-paced hospitality venues.
